I absolutely love boiled dinner. Growing up, we would occasionally have boiled dinner, especially on Saint Patrick’s Day! Boiled dinner is essentially corned beef and cabbage with some carrots and potatoes thrown in there too! An Irish household staple!

The best part was, since we had it only a few times a year, like Thanksgiving leftovers, there were always a lot of leftovers for the week! My favorite part is always the veggies over the meat so I tend to have a lot of corned beef leftover when I make a boiled dinner. Because corned beef is so high in salt content you can keep it well refrigerated for several days, so what to do with the leftover corned beef?

Make corned beef sliders for the whole family

One of my favorite things to do with leftover corned beef is make corned beef sliders! Not only are they tasty but they are a great way to make a fun lunch or dinner for the whole family that’s super quick and super easy!

What kind of bread should I use?

You can use any kind of slider buns/rolls you want, but I decided on brioche slider rolls. The buttery and soft buns complement and balance the salty and rigged meat of corned beef perfectly.

What else can I add besides or instead of mustard?

For ease and little mess and cleanup, I just throw some mustard on the bun and call it a day. However, you can always add to these sliders lettuce, tomato, pickles, or mayo. Or make Reuben sliders with sauerkraut, corned beef, and thousand island dressing. There are no rules about what you do with leftover corned beef but I always like to make leftovers as easy and convenient as possible, which is why I opted for these corned beef sliders.

Can I store the corned beef sliders?

As I mentioned above, the corned beef can last quite a few days in the refrigerator, but I wouldn’t recommend assembling the leftover corned beef into sliders until you’re ready to eat them. The same goes for storing them afterward. Only make as much as you need and you continue to have leftover corned beef, don't assemble the sliders until you’re ready to eat. They could get soggy or stale being refrigerated completely assembled. So go ahead and keep bread stored separately properly and leftover corned beef stored in the refrigerator but do not store them assembled for more than a few hours.

How do you make corned beef sliders?

These corned beef sliders are incredibly easy to make. All you have to do is slice the rolls in half, add as much mustard as you want, and add a slice of corned beef to each roll. In just a few minutes you have lunch or dinner for the entire family!

Corned Beef Sliders Recipe

Ingredients

  • 12 sliced of corned beef
  • 12 brioche slider rolls
  • Mustard of your choice

Instructions

  1. If you need to slice your leftover corned beef, do that first. Also, slice each of your brioche slider buns in half
  2. Add a dollop of mustard to each top of the slider buns
  3. Add your corned beef and serve immediately. Store up to 3 hours assembled, otherwise leave unassembled until you're ready to serve

Notes:

Store the leftover corned beef in your refrigerator for up to 5 days. Do not assemble the sliders until you're ready to serve. You can add other ingredients like sauerkraut and thousand island dressing for Rueben sliders.
